Learn how to make easy chocolate cookies from start to finish in under 30 minutes. Soft and squidgy, they’ll go down a treat with kids and adults alike. There are many ways to make chocolate cookies out there, but we’ve found this method to be the absolute best. The beautiful thing about making your own cookies is you get to choose the size, extra-large or mini cookies they all taste fabulous. For a gooey, chewy finish, don’t cook them for too long, or if you like them crisp and crunchy, keep them baking until the max time.

Ingredients

  1. Sugar: ½ cup 100 g (granulated)
  2. Brown sugar: ¾ cup 165 g (packed)
  3. Salt: 1 tsp
  4. Unsalted butter:  ½ cup 115 g (melted)
  5. Egg: 1
  6. Vanilla extract: 1 tsp
  7. Flour: 1 ¼ cups 155 g
  8. Baking soda: ½ tsp
  9. Semi-sweet chocolate chunks: 110 g
  10. Dark chocolate chunk: 110 g

How to Prepare

First step: In this first step you need to bring a large bowl, sugar, salt, and butter. Then whisk them together until a paste forms with no lumps.

Second step: In this step bring the egg and vanilla and whisk them in a bowl, then, beating until light ribbons fall off the whisk and remain for a short while before falling back into the mixture.

Third step: Sift in the flour and baking soda, then fold the mixture with a spatula (Be careful not to overmix, which would cause the gluten in the flour to toughen resulting in cakier cookies).

Forth step: Fold in the chocolate chunks, then chill the dough for at least 30 minutes. For a more intense toffee-like flavor and deeper color, chill the dough overnight. The longer the dough rests, the more complex its flavor will be.

Fifth step: Preheat oven to 350°F (180°C). Line a baking sheet with parchment paper.

Sixth step: Scoop the dough with an ice-cream scoop onto a parchment paper-lined baking sheet, leaving at least 4 inches (10 cm) of space between cookies and 2 inches (5 cm) of space from the edges of the pan so that the cookies can spread evenly.

Seventh step: Bake for 12-15 minutes, or until the edges have started to barely brown. Cool completely before serving. Enjoy!
