Stuffed Zucchini with Yogurt is a Middle Eastern famous dish, that belongs to the rest of the stuffed vegetables, that are known as (DOLMA), which is an ancient name at the Romanian time. This dish was invented in central Asia, which it was served at the ceremonies and occasions. The first stuffed vegetable was made from pepper, then used different kinds of vegetables, like tomato, eggplant, grape leaves. The filling of these vegetables is ground meat and rice. As our dish today, the Stuffed Zucchini with Yogurt. So, after we recognized the history of the stuffed dish, let us introduce you to ingredients of this fantastic and delicious recipe:


  1. Zucchini: medium size\ quantity: 1 kg
  2. Rice: A cup of white Egyptian rice
  3. Meat: 100 g ground meat
  4. Spices: (black pepper, dried mint, salt, cinnamon, sweet red pepper)
  5. Olive oil: 5 tbsp
  6. Yogurt: 1 kg
  7. Corn Flour: 1 tbsp
  8. Nuts: Almonds (for dressing)
  9. Garlic: three cloves
  10. Oil: 2 tsp

How To Prepare

First step: wash the zucchini very well, then dry them, and start to squash the zucchini make sure not to dig in so deep or make it thin in order not to torn apart during the cooking.

Second step: after you finished of preparing the zucchini, put it in water and add a little of salt, then let it soak for 10 minutes, then wash it and put aside to dry.

Third step: now you are going to prepare the filling. Bring the rice (that it is soaked for 30 minutes before), add to it the ground meat and spices (black pepper, dried mint, salt, cinnamon, sweet red pepper) and mix them together.

Forth step: after the zucchini dried, add the filling that you have prepared previously, then press a little with your finger inside so the filling does not come out at the cooking, leave about 2 inches unfilled in the zucchini. Put it in water on a medium heat for 7 minutes.

Fifth step: now you are going to prepare the zucchini yogurt. Bring yogurt and corn flour and mix them together then put them on a medium heat until it cooked.

Sixth step: bring the zucchini out of the water and dry them, then put them in the cooked yogurt and let it set for 20 minutes, then a punch of dried mint.

Seventh step: bring the oil put it on a medium heat then add the almond and fry it, then put the zucchini in a dish then add the almond above it. By this you finished the stuffed zucchini with yogurt.
